Sweet & Savory Kolache: Czech Classics & Texas-Style Favorites

Billowy-soft and irresistibly delicious, discover two beloved versions of kolache in one unforgettable class. Master two distinct brioche-style doughs in this hands-on bake-along, where you’ll learn how to create both traditional sweet Czech kolache and savory Texas-style kolache completely from scratch.

We’ll start with the classic European version made with a sweet brioche-style dough, filled with fruit preserves or sweetened cheese filling, topped with buttery crumble, and finished with a delicate glaze. Then we’ll explore the Texas favorite; rich, tender brioche-style dough, wrapped around savory fillings like sausage and cheese—and an elevated, oversized, gourmet take on a pig-in-a-blanket that’s as comforting as it is crave-worthy. We’ll even make a wonderful honey mustard dipping sauce to complete the experience. 

Along the way, you’ll build confidence working with TWO enriched yeasted doughs and learn techniques you can use again and again. Whether for breakfast, holidays, or anytime baking, these kolaches are guaranteed to become family favorites.

Equipment: A stand mixer with dough hook is highly recommended if you would like to make both types of kolache.

The week of class, you will receive an email with an ingredient and supply list, prep packet, and Zoom video conferencing link. A few days after class, you will receive an additional email with the recipes used during the class.

One registration fee for this class can include immediate family members living full-time in the same home ONLY. If children are participating, adult supervision is required.

Tess Georgakopoulos has been cooking since she was roughly six years old -- well over forty years. Born into a Greek family, the art of cooking traditional meals using one's senses rather than recipes and measurements was passed on from one generation to the next. Her father was a trained chef who brought the magic of food to life in another form as they cooked elaborate family meals together. Food prepared from the heart, with one's own hands and creativity, was, and continues to be, an expression of love in her home. As a skilled home-cook and baker, Tess enjoys creating original recipes for her family and friends. She has recently started writing her first cookbook, and has a food blog in the works.
